Now that Memorial Day is behind us, it is unofficially summer! For my family, this means a more laid back lifestyle, lots of beach time, and dinner served hot off the grill!
I am always looking for new recipes to spice up our dinner routine but honestly, I don’t have a ton of extra time to plan and cook meals between work, running a household and perhaps most importantly, playing with my kids. Bottom line, I need a stash of easy grilling recipes/marinades so that we are not eating the same old thing week after week. My cousin and his wife passed along this delicious and simple marinade recipe from one of their favorite restaurants. I have used this recipe for grilled chicken and for grilled chicken kabobs, but it would also work well with pork or beef.
For a delicious grilled meal, simply mix together one-third equal parts teriyaki sauce, italian dressing and pineapple juice. I typically use a small 6 ounce can of pineapple juice and ideally, you want to leave the meat and/or veggies marinating for 24 hours so plan ahead if at all possible, although I have marinated for as little as an hour and still ended up with a crowd-pleasing meal. The marinated food can quickly be thrown on the grill after work and served with rice or a salad.
