During chemo I couldn’t take vitamins and was told to get all my nutrients from food. However, since I often didn’t feel like eating, that was actually a rather difficult problem! Enter the Vitamix, a life changer. However, now I have the opposite problem, I love eating and everything tastes great. So, I need to use the Vitamix to make delicious food that is loaded with nutrients and health benefits but also low in calories. Here are two amazing recipes that are very low calorie and taste great: Broccoli soup and Banana ice cream.
This broccoli soup recipe came about following the 90th birthday celebration of my fiancée’s grandma. I was discussing composting/food waste and it was brought to my attention that maybe I was throwing out things that could still be used like the stems. Hearing stories about growing up during the Great Depression and using and re-using everything you had, caused me pause. Today’s culture seems to have left that lifestyle in the dust as we are users and over-users of new products producing excessive, unnecessary waste. I took this talk as a challenge to try to expand what I normally use, and the next time I made roasted broccoli I put those stems to good use – enter broccoli soup!
Vitamix – Cream of Broccoli Soup (~30 calories/cup)
Chop broccoli into 1″-2″ pieces (4-5 cups worth, or a big bunch)
Boil in 4 cups of chicken broth until fork tender (5-10 minutes)
Add salt & pepper to taste (it’s better with heavy pepper!)
Add 3/4 cup of fat free Greek yogurt
Blend on high variable in 2 batches for 30 seconds each
This renders a more ‘drinkable soup’ if you prefer it to be thicker omit a cup of the chicken broth. Feel free to doctor it up as well, a few small pieces of broccoli in it would add additional texture.
Onto dessert! I have always had a huge sweet tooth, and I think I passed that onto my daughter as well. I like for her to end the day with a treat if she was good for dinner, but aim to avoid excessive processed sugar. Also, this is a great way to use up bananas that are too ripe to eat, and destined for food waste. This recipe makes it okay to eat ice cream every day! Plus I have the cutest kitchen helper.
Vitamix – Banana Ice Cream (~85calories/serving – makes 3)
1 Frozen banana (freeze unpeeled – you’ll only make that mistake once!)
1/2 cup frozen strawberries
1/4 cup frozen blueberries
2 splashes of coconut milk
2 Tbsp mini Ghirardelli dark chocolate chips – the best part!
(optional – 1Tbsp fat free Greek yogurt)
Blend on high variable pushing down fruit with the tamper for 1 minute until smooth.
