Summer is officially in full swing, and I’m sure we’ve all been to a BBQ or two by now. At the same time, maybe you planted some greens this spring and they’re beginning to take over the garden- what to do with them now? Here’s a few easy ways to incorporate all those leaves into some of your favorite BBQ dishes, and maybe inspire you to create something new!
Caprese, pesto, bruschetta- probably on everyone’s top ten list. On a sandwich, rolled into sushi- also fabulous methods of transporting that wonderful goodness into your mouth. But did you ever consider just using a few leaves with some honey in a soothing tea? Or even chop some up, blend into a couple frozen bananas and you have a refreshing, healthy treat! At the very least, now’s a great time to harvest and freeze the leaves in oil, so you can use them during the winter.
Very likely, if you joined a CSA this year, you are up to your ears in kale right now. You may even be backlogged with a couple of weeks worth of those crinkly vitamin powerhouses, but don’t fret! They are very hardy and can last sometimes up to a month in your fridge. So if you’re tired of kale smoothies, consider taking a couple of minutes to chop them up really small, and fill up a container in your fridge. Literally anything you make- salad, eggs, hamburgers, casserole, tacos- will benefit from a handful of chopped kale tossed right in the mix. Pesto is a great go-to, and don’t forget the freezer! Throw it in as is, and it’ll last 4-6 weeks, blanched will last 8-12 months. And if you’re hosting a gathering, consider making this kale and tequila your signature drink of the evening. That’ll be sure to clean up any leftover leaves you have in the fridge!
This is my toughest green to keep up with- I’ll even skip it some weeks in my CSA pickup, because I’m simply over run. We even have it every night with dinner and there’s still so much! I consider myself pretty creative with salads, so I looked up some other delectable options. Lettuce wraps, totally forgot about that! And lettuce soup– have you ever tried it? I’m all over it!
