Every so often, I cook something that tastes so good that I would almost feel guilty not passing the recipe on, especially when the recipe is not only delicious but it’s also good for you!
It wasn’t too long ago that I struggled with preparing broccoli. In our house, you would have found broccoli in one of 2 ways: raw with dip or steamed with butter. That’s it. I know, I know. How boring!
Then I stumbled across this recipe for roasted broccoli and now we have a third broccoli menu item in the mix, and this one’s got pizzazz!
I do add a bit of sugar to the dressing but otherwise follow the recipe as directed. Everyone in my family gobbles it up so give it a try. I’ve also adjusted the cooking time and tried cauliflower and brussel sprouts so get creative! I bet a mix of vegetables would taste fantastic!
You will need the following ingredients:
- 2 medium sized heads of broccoli (or substitute veggie of your choice)
- 2 tablespoons of olive oil
- 2 tablespoons or so of balsamic vinegar
- salt, pepper and sugar to taste
Wash and cut the broccoli into bite sized pieces. Combine the dressing ingredients in a large bowl and toss with the broccoli, then place the broccoli on a baking sheet and bake in a preheated 450 degree oven for 15 minutes (or so) turning once about halfway through.
Honestly, this is so simple and delicious. Sweet and crunchy, it’s almost decadent. Seriously, It’s a must try.
