It’s true- if you’re about to drop the f- bomb and you realize there are little ears nearby, you can certainly use this phrase as a quick substitute. But have you ever actually had them? Neither had I, but I had heard of them. And as I stood at my kitchen counter, drinking coffee and staring out at the sunrise, I decided to go for it!
We had some cream cheese, so Claire and I picked ourselves some herbs that we thought would be tasty. Then we grabbed some blossoms (watch for bees!) and headed back inside.
Next, we put our herb harvest into the blender with the cream cheese,
proceeded to spoon the mixture into the blossoms,
then carefully twist them shut.
Our next step was to beat the eggs with a whisk,
dip the blossoms in the egg batter,
then throw them in a pan on medium heat with some olive oil.
I’m a firm believer in greens for breakfast, so we lightly steamed some swiss chard to enhance our creation.
And voila! A beautiful Sunday breakfast! (so proud!)
There you have it! If I didn’t keep stopping to take all the pics, it probably would have been just as quick and easy as making french toast. You can also get creative with your stuffings, maybe subbing in some grains like quinoa, rice, or couscous to pack a little more of a nutrition punch. Overall, Claire and I had a lot of fun making these, and she was able to help with a lot of the steps. My hope was that she would love it and clean her plate, but I’m happy to report that she at least attempted a few bites. Can’t ask much more of a toddler, I suppose!
